Next up is the seasoning. Some folks overcomplicate things, but we like to keep it simple. A classic mix of salt, black pepper, and a little garlic powder does the trick. The real magic comes from the smoke, so there’s no need to drown it in fancy rubs. We coat the brisket generously and let it sit to absorb those flavors before it even hits the smoker.

The biggest mistake people make is cutting into a brisket too soon. Resting is key. After it’s done cooking, we wrap it in butcher paper and let it rest in a warm spot for at least an hour. This lets the juices redistribute, so every bite is tender and flavorful.
